Upon request, I am sharing the recipes from the Holiday Soiree held on December 13th at the office. Great food, great company and lots of laughter made the evening memorable. Thanks to all for coming to the party!

Kale Waldorf Salad

Ingredients for the salad:

-4 cups packed finely chopped raw kale, lacinato kale or baby kale works quite well.

1 large red apple

1 cup of thinly sliced celery (optional)

1/4 cup walnuts, toasted and chopped (toast walnuts in a 350 degree oven for 6-8 minutes. Watch them carefully, they can burn quickly) P.S. They make your house smell so good!

2 tablespoons raisins

2 tablespoons dried cranberries

Mix all the salad ingredients together


Ingredients for the dressing:

1/2 chopped red apple

1/4 cup walnuts (toasted and chopped)

2 tablespoons raisins

2 tablespoons Dijon mustard

1 tablespoon red wine vinegar

2 tablespoons fresh lemon juice

1/8 teaspoon sea salt

Put the 1/2 cup chopped apple in a blender along with remaining 1/4 cup walnuts, remaining 2 tablespoons of raisins, mustard, lemon juice, vinegar and salt. Puree until well combined and slightly thick, adding water if needed to thin. Pour dressing over kale salad and toss to combine. Enjoy!
