Ingredients:
2 onions, finely chopped
2 cans fava beans (available at Mom’s)
Juice of one lemon
Salt
Dressing:
2-1/2 tablespoons olive oil
Juice of 1/2 lemon
3 tablespoons finely chopped fresh dill or parsley
1 tsp. paprika or a pinch of cayenne pepper
Saute onions gently in oil in a large saucepan until they are only just soft and a very pale golden color.  Add about 2-1/2 cups water and bring to a boil.  Drain the beans of their water, add them to the saucepan, and cook over low heat without any salt until they practically disintegrate.  Add more water during the cooking time if necessary.  This will take about an hour, according to the quality of the beans.
When the beans are ready, there should be hardly any liquid left.  Mash them to a paste.  Season with the lemon juice and salt.  For a very creamy consistency put the mixture through a sieve or in a blender.
Pour the puree into a serving bowl.  When cold, decorate with a dabble of olive oil, lemon juice, and chopped dill or parsley.  Red paprika may be added to this mixture for color, or cayenne pepper for strength. Enjoy!
